Have you ever plucked a dandelion out of your lawn? If you have, you've plucked one of nature's best remedies for many of the things that might ail you. You want to keep your lawn looking beautiful, but those dandelions could be used in a variety of healthy ways. Don't use weed killer on your lawn. Keep it organic and use your dandelions in the kitchen.

You can dry dandelions and use them for teas, or you can use them fresh from the yard for your salads. If you're going to use your own dandelions, it's important that you not use chemicals on your lawns. Below is a list of some of health benefits you can get from eating dandelions.

Nutritional Value

Dandelion roots and leaves are rich in vitamins and nutrients. In fact, the leaves are an excellent source of vitamin C, vitamin A, and iron. Steamed dandelion leaves make an excellent addition to any lunch or dinner.

Ingredients

  • Steam basket
  • Fresh dandelion leaves
  • Olive oil
  • Lemon juice
  • Sliced almonds or walnuts

Directions

  1. Place your dandelion leaves in the steam basket.
  2. Steam your leaves for about 5 minutes, or until they are tender.
  3. Remove your leaves from the basket and place them in a dish.
  4. Drizzle 2 tablespoons of olive oil over the leaves.
  5. Spritz the leaves with 1 teaspoon of lemon juice.
  6. Sprinkle sliced almonds or walnuts over your dandelion leaves.

Ingredients You'll Need

  • Small pan
  • Dandelion roots
  • Lemon juice
  • Sharp knife
  • Strainer
  • Water
  • Sweetener

Directions

  1. Place about 8 ounces of water in your pan.
  2. Bring the water to a rapid boil.
  3. Gather your dandelion from the yard.
  4. Use your knife to separate the root from the leaves.
  5. Wash the root to remove all the dirt.
  6. Cut the root into small pieces.
  7. Place about 3 tablespoons of dandelion root in the pan of water.
  8. Cover the pan and reduce the heat.
  9. Allow the water and roots to simmer for about 2 minutes.
  10. Turn the fire off and allow the pan of water to set for about 45 minutes.
  11. Strain your water to remove the roots.
  12. Pour your dandelion tea into a cup and add sweetener and lemon juice to taste.
